Sergio Herman, the Dutch chef and entrepreneur, presents one of its newest additions in Antwerp: restaurant Le Pristine. A stylish mix of Italian flavors and Herman’s Zeeland-roots.

The restaurant proved to be so successful, that a second location is planned in Singapore, opening in the third quarter of 2023. Herman links the restaurant to the glamour of Parisian hotels and brasseries, such as Hotel Costes.

Le Pristine in Antwerp brings a festive ode to modern Italian cuisine with a touch of Sergio Herman’s roots in the Dutch province of Zeeland. The beautiful establishment, which feels like a modern and stylish trattoria, is located in the middle of Antwerp’s vibrant fashion district, locally named the ‘Theaterbuurt’ and officially known as the Quartier Latin.

The à la carte menu features modern Italian dishes using local delicacies from the sea. The wine list, selected by Willem van den Broeck, features mostly natural wines.

Space Copenhagen signed on for both the interior and the décor. All in close collaboration with Sergio Herman’s concept studio SH19. Iconic Flemish and Dutch masters served as inspiration for the color palette.

The eye for detail is extraordinary. Something we at The Makers can admire. From the food to the fascinating interior, but even the servers are dressed to perfection. Nothing is left to chance.

Dressed by a local designer, the broad collared shirts stand out with a black tie, finished off with tailored black trousers and a double breasted white overshirt. Staff is often an overlooked element within a restaurant’s style and that is a shame. Especially if you are, like us, keen to see the look & feel of a place that is also reflected in the staff’s clothing.

Besides being a hotspot for lunch and dinner, it is also a bar and as the prizewinning Dutch chef calls it: ‘an immersive experience with an exceptional eye for detail, high quality gastronomy and hospitality’. The result is there for sure, because Le Pristine has already been awarded with a Michelin St
